Katie's Beef Gado Gado

Katie's Beef Gado Gado

This recipe is a family favourite in Katie's house where the kids demolish every last bite and come looking for more!

Ingredients

Beef Skewers

  • 600g Millstream Meadows rump steak or sirloin steak or stir fry strips
  • 2 tbsp kecap manis
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp grated ginger
  • 1 clove garlic, finely chopped
  • 1 tsp brown sugar
  • 1 tbsp extra virgin olive oil
  • Bamboo skewers soaked in water 20 minutes

Red Curry Peanut Sauce

  • 1 tbsp extra virgin olive oil
  • 2 cloves garlic, finely chopped
  • 1 small chilli, finely chopped
  • 1 to 2 tbsp Thai red curry paste
  • 1 tsp KEEN’s Curry Powder
  • 1/2 cup peanut butter
  • 2 tbsp kecap manis
  • 1 2/3 cups coconut milk
  • 1 tbsp fish sauce
  • 1 to 2 tbsp lime juice
  • Warm water as needed to loosen

Rice & Toppings

  • 1 - 1/2 cups jasmine rice
  • Coriander leaves to serve
  • 1/4 cup crushed roasted peanuts to serve
  • Lime wedges to serve

Fresh vegetables for dipping

  • Cucumber spears
  • Carrot sticks
  • Capsicum strips
  • Snow peas
  • Raw Brocolli
  • Any other vegetables you like

 

Method

1. Cook the rice

Rinse rice until water runs mostly clear. Cook and keep warm.

2. Cut and marinate the beef

> Choose strips or cubes.

> Beef strips - Slice across the grain into strips about 1 cm thick

> Beef cubes - Cut into even 2 to 3 cm cubes

> Toss beef with kecap manis, soy, lime juice, ginger, garlic, brown sugar and extra virgin olive oil. Marinate 20 to 60 minutes. 

3. Make the red curry peanut sauce

> Heat olive oil over medium heat in a small pot.

> Cook garlic and chilli 1 minute, stirring so it does not brown.

> Add red curry paste and curry powder, cook 1 minute.

> Add peanut butter, kecap manis and coconut milk. Stir until smooth.

> Simmer gently 3 to 5 minutes to thicken.

> Stir in fish sauce and lime juice. Loosen with warm water until dip friendly.

4. Prep the veg

> Slice fresh veg into dip sized pieces. Arrange on a platter.

5. Cook the beef skewers

1.     >Thread onto skewers. Cook on a hot BBQ or grill pan.

2.      >Strips - 1 to 2 minutes per side until browned and just cooked

3.      >Cubes - 2 to 3 minutes per side depending on size

4.      >Rest 3 minutes.

 6. Serve

> Spoon rice into bowls or onto a platter.

> Add the veg, top with beef skewers, drizzle some sauce over, and serve extra sauce on the side for dipping.

> Finish with coriander, crushed peanuts and lime wedges.
