Thai Style Crispy Pork

This pork recipe is fast and easy to make and packs a flavour punch.

Ingredients

  • 500g Millstream Meadows Diced Pork
  • 1/2 Cup cornflour
  • 4 Tbsp fish sauce
  • 1/3 Cup sweet chilli sauce
  • 2 Tbsp lime juice
  • 2 cloves garlic/ 2 tsp minced garlic

Method

1.  Coat diced pork pieces in 2 Tbsp fish sauce then drop a few pieces at a time into the cornflour to coat it well ensuring to shake off any excess.

2.  Mix remaining fish sauce, lime juice, garlic and sweet chilli sauce in a small saucepan and simmer until you get a sticky syrupy consistency.

3.  Cook the pork - ideally in a deep fryer with lard but shallow frying in lard or oil will work too.  The pieces will cook in around 3-5 minutes.  You are looking for an internal temperature of 65 degrees Celsius or 150 degrees farenheit.

4.  Toss the pork in the sticky sauce quickly and immediately serve over rice with steamed veggies or with plain tomato and cucumber (like they do in Thailand).
